3 GASTRO LJETO U RIJECI / GASTRO SUMMER IN RIJEKA VESELO I ŠARMANTNO Žlahtina je specifična, autohtona i samo naša. Udo- maćena u Hrvatskom primorju, pogotovo na Vrb- ničkom polju na otoku Krku. Po prirodi nježna, u boji diskretne slamnatožute boje sa zelenkastim reflek- sima, na nosu mineralno-travnato-voćna, ugodno aromatična, s notama mokrog morskog kamenja, zelenih jabuka i krušaka, citrusa, te bijelih cvjetova. U ustima osvježavajuća i slankasta, nježnog tije- la i meke strukture, te ugodno gorkasta u silasku. Zahvaljujući svojoj urođenoj mineralnosti i svježini dobra je baza za pjenušce. Žlahtina je najsimpatič- nija kada je još u pubertetu, a životni joj je vijek od proljeća do proljeća. Idealno je neobavezno pro- ljetno-ljetno vino. Loša je navika žlahtinu piti «za- leđenu» odnosno pothlađenu. Nikada ju ne treba rashladiti ispod 10°C, jer će preniska temperatura zatomiti sve njene suptilne arome. Njena urođena mirisnost, ali i mineralnost, kako na nosu, tako i slankast i suh okus u ustima, čini ju izvrsnim aperitivom, ali i idealnom za sljubljivanje sa širokom paletom plodova mora. Najidealnija je uz školjke, sirove, na žaru ili u tradicionalnoj buzari, skuhanoj upravo na žlahtini, ali kvarnerski škampi, lignje i oborita riba prirodni su joj partneri. Kreću Dani sardela, a žlahtina joj je suđena. Bilo da je sirova, marinirana, frigana ili na žaru, žlahtina će joj se znati nametnuti svojom mirisnošću, ali i zna- lački se probiti svojom svježinom kroz njenu urođe- nu zamašćenost. Žlahtina je veselo, šarmantno i zabavno vino u taj- noj misiji protiv ljetnih vrućina. Živjeli! MERRY AND CHARMING Žlahtina is unique, indigenous and ours alone. It is cultivated in the Croatian Littoral, particularly at Vrbnik Field on the island of Krk. It is a delicate wine with a discreet straw-yellow hue and gree- nish hints. On the nose, it is mineral, grassy and fruity, as well as pleasantly aromatic with notes of damp sea pebbles, green apples and pears, citruses and white flowers. It has a refreshing and salty mo- uthfeel with a gentle body and soft structure; it is pleasantly bitter as it rolls down the throat. Due to its inherent minerality and freshness, it makes for a good base wine for champagne. Žlahtina is at its most congenial while still in puberty, seeing how its life cycle spans from one spring to the next. While the perfect option for the spring and summer, it is a bad habit to drink Žlahtina «on the rocks» or chi- lled. It should never be chilled below 10°C because the low temperatures dilute the wine’s rich variety of subtle aromas. Its innate fragrance and minerality on the nose, as well as the salty and dry mouthfeel, make Žlahtina a superb aperitif that perfectly complements a wide variety of seafood. While it goes best with shellfish and cheeses and can accompany grilled dishes or be used for preparing food in the traditional “buzara“ style, it is the shrimps from Kvarner, squid and de- mersal fish that are Žlahtina’s natural companions. With Sardine Days just around the corner, it should be noted that Žlahtina and sardines were made for each other. No matter how sardines are prepared, whether raw, marinated, fried or grilled, Žlahtina’s fragrance will always prevail and its freshness will deftly cut through the fattiness of the sardines.
